Macaroni and Cheese from Scratch

Some days I look in the fridge and all I see is a piece of lettuce and a cup of milk. When that happens I can usually root around and find a few ounces of cheese and at least a half of box of noodles which typically means Joe and Marston are getting macaroni and cheese for dinner (not that either of them complain). Here’s my recipe for simple macaroni and cheese from scratch that everyone will love.

The Best Sour Cream Potato Salad

As a recent mayonnaise convert, for years I hated potato salad. A perfectly good potato slathered in mayonnaise did not sound appealing to me. And going to yet another backyard barbecue and only eating a hamburger got old after awhile. Since I knew I liked baked potatoes, I started substituting that for most of the mayonnaise and voila, it was delicious! I’ll eat traditional potato salad now, but this is still my favorite kind to bring to parties. It can be served warm or cold and is always tasty.

My second youngest sister gets married on Sunday. She is marrying an Irishman, which is appropriate because her whole life she’s played celtic music, dressed up like a fairy and spoke in an Irish accent. Phil is fantastic and we’ve loved getting to know him. When his family arrived this past weekend, we of course had to have the whole crew over for dinner.

And since it was also my birthday (I turned 29 again), we had a feast! I love flank steak, so we threw together a marinade inspired by one of my favorite websites, Cooks Illustrated. It’s the best flank steak marinade in my opinion.

Homemade Mayonnaise in Mason Jar

I wasn’t really a mayonnaise person until I went to France. They have a unhealthy relationship with mayonnaise. Practically every restaurant has a shrine to it (as well as one to moutarde). They dip everything in it — steaks, fries, eggs. You heard me eggs. The way we might order spinach artichoke dip, they order hard boiled ouefs with mayonnaise. Which I guess just means they really like eggs, cause really it’s just egg dipped in more eggs. That level of mayonnaise love is a bit much for me. But mayonnaise is still delicious and useful! Here I share my favorite homemade mayonnaise recipe.

On Father’s Day Joe is king. (He’s king of my world every day, but I do a better job of acting like it on days like Father’s Day and his Birthday). We started the day off with his favorite breakfast — French Toast. And since I was missing Paris, I decided to stuff it with our favorite crepe ingredients – Nutella and bananas. If you like Nutella at all, or chocolate, or french toast, or breakfast, then you will love this recipe of Nutella and Banana Stuffed French Toast.

Towards the middle of June I tend to realize that if I keep eating hamburgers and pulled pork all summer I’m going to have to buy a new wardrobe by August. And even though I like spending money, Joe would rather save it for boring things like bills (boo hiss).

When that happens I turn to fish and salads (at least for a couple of days until I convince myself that I was never gaining any weight to begin with). Here I share a healthy meal that’s light enough for me, and filling enough for Joe – Grilled Salmon and Asparagus Salad.
