Celebrating Love with Chocolate Bourbon Macarons

Joe took me to the city of love and lights this year (in case you haven’t heard). We had so many romantic moments – walks along the Seine, picnicking under the Eiffel Tower and sitting in local cafes. It was a dream and I wouldn’t trade our time in Paris for anything in the world. While we were there, trying macarons from different patisseries was a favorite pastime. Pierre Herme was the clear winner.

Because it’s our anniversary today, I’m reprising the macarons we had in Paris. My chocolate macaron recipe won’t hold a candle to Pierre’s magnificent creations, but I’m hoping they’ll be reminiscent of sweet moments for you as they are for me.

Cuban Black Beans and Rice

I was born in the Dominican Republic and lived in Mexico every summer for years growing up. When I traveled the world in 2007, we ate rice and beans once a week without fail. I guess you could call me a rice and beans connoisseur (I know, it’s what ever little girl dreams of being). Every country does beans and rice a little differently, but they all do them. My favorite form of rice and beans is Cuban black beans and rice which I am sharing with you today.

But knowing which cookbooks to read and learn from might not be easy, there are SO MANY OF THEM and they ALL look so yummy! My sister is having a housewarming party tonight which means I get to eat hamburgers. I love hamburgers so much. When I was pregnant, I would eat them for breakfast. Although that’s not saying much cause even when I’m not pregnant I eat them for breakfast (never judge me). One day I’ll share my favorite hamburger recipe, but I’m still working on it. In lieu of a hamburger recipe I’m proud of, here’s a great side that goes with hamburgers – kale and brussel sprout coleslaw that I’m bringing with me tonight.

Hope you had a wonderful Memorial Day, celebrating our freedom and honoring those who died fighting for it. We grilled out, no surprise there, and had a quiet evening in. I found a mahi-mahi filet on sale at the market two days ago, so I marinated it and topped it with a watermelon peach salsa. I love sweet and spicy salsas, they’re fresh, brighten up the plate and compliment white meats well. And you can eat the leftovers with chips! Recipe here.

Grilling out is one of the best parts of summer (right alongside beer and the beach). Discovering new takes on traditional grill recipes is equally fun. I shared on Monday a recipe for Pulled Pork Sandwiches on the grill. Today I share a recipe for one of my new favorite discoveries, a topping for any kind of grilled sandwich, pickled onions.

One of my favorite things about Paris is the ubiquity of crème fraîche. I can never find it anywhere in the states (although this might have something to do with the fact that I live in the backwoods of Georgia). So invariably I always substitute sour cream for it. How excited was I when I learned to make my own creme fraiche at home and it was SO easy (I was very excited, in case you’re wondering). I’m sharing it here so you can too!
