Roasted Radicchio with Blood Oranges and a Warm Bacon Dressing

How are those healthy eating New Years resolutions going? The roasted radicchio recipe I’m sharing today will do one of two things. Either you will love the adventure of cooking new foods and feeling good about what you are putting in your body (which is what I’m hoping for!). Or, you’ll make it, hate it and feel defeated.

DON’T BE DEFEATED! If you love radicchio, you’ll love this. And if you don’t, it’s an adventure! You can’t be afraid to make something you don’t like or have never tried, it’s part of the cooking journey. I believe in you!

St. Germain Kumquat Cocktail

We’re in California right now visiting my favorite in-laws. You can’t walk farther than the mailbox without being assaulted by all the citrus. Everyone has citrus trees. In their front yard, back yard, side yard, THEY ARE EVERYWHERE. My in-laws have a lime, lemon, a Meyers lemon, tangerine and an orange tree. And all these trees are about to snap in half with all the fruit hanging from their limbs. You can plan on seeing twelve different citrus recipes over the coming weeks, lucky you.

Today we’re starting off with a kumquat gin cocktail. It’s low(er) calorie and very refreshing. You will love it.

Easy Pad Thai Recipe

Today I’m sharing my go-to Pad Thai Recipe. I instagrammed a picture of when I cooked it for dinner a month or so ago and got a barrage of emails and comments requesting my recipe. Until now while I’ve wanted to share my pad thai recipe, I have not wanted to share it because I don’t have a recipe for the sauce, I use store bought. And I’m ashamed, because everything I believe in about food is not store bought processed food. But I also believe in family time, investing in one another and I believe in good food (duh). And this is good food.

Baby Kale Salad with Spanish Chorizo, Manchego Cheese, Crispy Leeks and a Mustard Shallot Vinaigrette

A couple of weeks ago Joe and I went to The Optimist. Joe ordered the kale salad with chorizo. It was so delicious that I’ve been dreaming of my own version ever since. If you’re going to have a meat and cheese plate, you might as well throw in some kale and call it healthy. Also leeks, come on! This thing is teeming with vegetables!

Roasted Beet Salad with Goat Cheese, Kumquats, Pomegranates and Arugula with a Smoky Orange Vinaigrette

Marston and I are learning to like beets this week, and probably next week too. Joe and Remy already like beets. If you’re in the Joe and Remy camp, you’ll love this roasted beet salad I’m sharing today. If you’re in the Mars and Talia camp, you’ll love this arugula, kumquat and goat cheese salad with a smoky orange vinaigrette. There are some pesky beets, but the antioxidants are so good for you! (This is what Mars and I keep telling ourselves.)

Warm Farro Salad with Butternut Squash and Pomagranate

Have you started searching new recipes in your quest for health this New Year ? I wrote yesterday about my 2016 goals, if you’re a ship in water trying to change direction it can be hard. So I’m here to help with the warm farro salad with butternut squash and pomegranate seeds I’m sharing today.

Farro is an heirloom grain of wheat chock full of nutrients. It is a great alternative to the monotony that is quinoa and brown rice. And it’s versatile, easily going well with sauces, added to soups or being tossed in to a salad like this one.

What does your Christmas dinner consist of? I remember when I realized that you didn’t have to have turkey for both Thanksgiving and Christmas. Now I love turkey and will happily eat it for both. Orange Chocolate Hazelnut Bark

Have you seen those orange chocolate ball things at the store during the holidays? They are my favorite holiday candy and every year as they appear on the shelves I dream about eating them. And then I have a nightmare about my pants no longer fitting which keeps them on the shelves and not in my grocery cart.

I have the same experience with dark chocolate hazelnut Ritter bars. So when I started dreaming of holiday goodies, a mash up of these two into an orange dark chocolate hazelnut bark seemed like a good idea. And it was a good idea, but not for my pants. Although who are we kidding, my pants didn’t fit after Halloween.

Have you decided what you’ll be serving for your appetizers yet for Thanksgiving? I have felt uninspired all month until last week when I was drinking a saison while cooking dinner. This is what happens when you drink you beer. It inspires you. (It also works for bourbon and wine.) I present to you chipotle cranberry sauce with raspberries and saison over cream cheese, voilà!
